Salinity typically refers to something possessing a salty nature. Whether this salty nature pertains to perceptibly salty flavor or presence of some chemical created by the neutralisation reaction of acids and bases (which may or may not have a salty flavor) depends heavily on the context. Something being heavily possessed of a saline nature would naturally be of particular (perhaps even singular) note as being rather more substantially - either objectively or subjectively - possessed of a salty nature.
